Old Bay Salmon

Ingredients
  

  • 2 lbs Salmon
  • 1 cup Jasmine Rice
  • 2 cups Asparagus
  • 2 tbsp Old Bay Seasoning
  • 2 tbsp Butter
  • 1 large Lemon sliced
  • 2 large Lemons quartered

Instructions
 

  • Preheat oven to 400°F
  • Begin cooking the rice, utilizing your preferred method. For this recipe, I prefer a rice cooker with no additional butter.
    1 cup Jasmine Rice
  • Line baking sheet with parchment paper. Pat salmon dry with paper towels & lay skin side down on baking sheet.
    2 lbs Salmon
  • Spray a separate baking sheet with non-stick spray. Rinse asparagus & cut off the bottoms, then lay evenly on the baking sheet.
    2 cups Asparagus
  • Melt the butter in the microwave. Using a basting brush, coat the salmon evenly with the melted butter.
    2 tbsp Butter
  • Sprinkle 1.5 tbsp of old bay evenly across the salmon, being sure to smooth it out with your hands for an even coat. Sprinkle the remaining 1/2 tbsp of old bay seasoning on the asparagus.

  • Cut 1 lemon into slices & arrange them to surround the baking sheet with the salmon.
    1 large Lemon
  • Place the salmon & asparagus into the oven & bake for 15-20 minutes. Be sure to check the center at 15. The salmon is cooked through once it reaches an internal temperature of 150°F.
  • Cut the remaining 2 lemons into quarters for a garnish.
    2 large Lemons
  • I like to let the salmon cool down a little, & then remove the enter skin from the bottom. This makes eating throughout the week much easier. Feel free to ignore this step if you want!
  • Separate the rice, salmon, & asparagus into 4 equal portions & enjoy your meal fresh squeezed lemon juice!
