Brennan’s Chipotle Order

Ingredients
  

  • 2 lbs chicken breast
  • 2 tbsp olive oil
  • 1/2 tbsp chipotle chili powder
  • 1/2 tbsp chili powder
  • 1/2 tbsp paprika
  • 1/2 tbsp garlic powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper omit for milder version
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 5 medium tomatoes Roma
  • 2 medium jalapeños remove seeds for milder version
  • 1/2 medium red onion
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1 tsp sugar
  • 4 medium limes
  • 1 cup shredded mozzarella cheese added when serving
  • 1 cup lettuce added when serving
  • 1 tbsp hot sauce added when serving
  • 1 cup jasmine rice
  • 1 tbsp salted butter
  • 1 can black beans 15.25oz (1.75 cups)

Instructions
 

  • Butterfly your chicken breasts (slice them in half horizontally, cutting away from you). By making the chicken breasts thinner, we will make it easier to cook them through & avoid the problem of the center remaining pink despite overcooking the outside.

  • Place your thinner chicken breasts in a medium-sized tub, separating them. Sprinkle the olive oil over the chicken, then rub (with your hands) the olive oil to make an even coat on both sides.

  • Combine the seasonings in a small bowl, then sprinkle half of the mixture over the chicken breasts. Rub with your hands until you have an even coat on the top, then flip the chicken & repeat for the other side. Let sit while preparing the other components of the recipe.
    1/2 tbsp chipotle chili powder, 1/2 tbsp chili powder, 1/2 tbsp paprika, 1/2 tbsp garlic powder, 1 tsp cumin, 1 tsp cayenne pepper, 1 tsp dried oregano, 1 tsp salt, 1 tsp pepper
  • Start cooking the rice utilizing your preferred method. My go-to is a rice cooker with 1 tbsp of salted butter in the mix,
    1 cup jasmine rice, 1 tbsp salted butter
  • Dice the red onion & then combine with 1 tsp salt in a small bowl. This produces a chemical reaction that helps soothe the bite typically associated with red onions.

  • Dice the tomatoes & jalapeños, mince the garlic, & cut the limes into quarters.
    5 medium tomatoes, 2 medium jalapeños, 4 cloves garlic, 1 tsp sugar
  • Combine the tomatoes, jalapeños, garlic, sugar, & red onion mixture in a medium bowl. Juice 2 whole limes into the mixture, setting aside the other 8 quarters to be served as a garnish.

  • Begin cooking the chicken. I prefer to grill the chicken on a flat-top grill, but you can absolutely use a grill with grates or stovetop. If cooking via stovetop, add an extra tsp olive oil or so to the pan before frying. Cook the chicken until no longer pink on the inside, ~3-4 minutes per side. (you will need to take the chicken out of the pan to check, or use a meat thermometer). Remove to a plate.
  • Heat the black beans over the stovetop in a small saucepan under medium heat until hot. Be careful not to cook too long or the beans will become mushy.

  • Dice cooked chicken into 1/2 inch cubes.
  • Evenly divide rice, beans, chicken, & tomato salsa into your meal prep containers. Add 2 lime wedges to each to be served with the meal. You can add lettuce & cheese here, but I (& presumably Brennan) prefer to not microwave those components & to add after the rest of the meal is heated, Chipotle-style. Regardless, for an authentic experience, add cheese, lettuce, hot sauce, & fresh lime juice when serving. Enjoy!
