Baked Tandoori Salmon

Ingredients
  

Salmon

  • 2 lbs Salmon
  • 1 tbsp Paprika
  • 1/2 tbsp Coriander
  • 1/2 tbsp Cayenne Pepper
  • 1 tsp Garam masala
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive oil

Raita

  • 1.5 cup Greek yogurt plain
  • 1 cup Cucumber diced
  • 1/4 tsp Salt
  • 1/2 cup Cilantro finely chopped

Sides

  • 1 cup Jasmine rice
  • 2 cup Zucchini sliced & quartered
  • 1 tsp Garlic salt
  • 1 tsp Garlic powder

Instructions
 

  • Heat oven to 400°F and line a baking sheet with parchment paper. Spray down a second baking sheet with a non-stick spray.
  • Start cooking the rice via your preferred method. For this recipe, I prefer a rice cooker with no additional butter (for the macros- salmon is fatty)
    1 cup Jasmine rice
  • Slice & then quarter the zucchini. Spread over your sprayed baking sheet, then season with garlic salt & garlic powder.
    1 tsp Garlic salt, 1 tsp Garlic powder, 2 cup Zucchini
  • Mix the listed seasonings together in a small bowl with 2 tbsp olive oil.
    1 tbsp Paprika, 1/2 tbsp Coriander, 1/2 tbsp Cayenne Pepper, 1 tsp Garam masala, 1/2 tsp Black Pepper, 2 tbsp Olive oil, 1/2 tsp Salt
  • Pat salmon down with paper towels until mostly dry. Place salmon on the parchment paper, then brush the salmon down with the spice mixture until evenly coated.
    2 lbs Salmon
  • Bake salmon filet & zucchini on separate sheets in the oven for 15-20 minutes, until cooked through or the salmon reaches an internal temperature of 145°F. Be sure to check at 15 minutes as your zucchini may outpace the salmon.
  • While your main course is baking, make the raita by mixing the Greek yogurt, diced cucumbers, cilantro & salt.
    1.5 cup Greek yogurt, 1 cup Cucumber, 1/4 tsp Salt, 1/2 cup Cilantro
  • Separate the salmon, zucchini, & raita into equal portions & enjoy!
