Ingredients
  

Shrimp Seasonings

  • 2 lbs Raw Shrimp
  • 2 tbsp Olive oil
  • 1 tbsp Paprika
  • 1 tbsp Italian Seasonings
  • 1 tsp Pepper
  • 1/2 tsp Salt
  • 1 tsp Crushed Red Pepper optional
  • 1 large Lemon juiced

Delicious Sauce Ingredients

  • 2 tbsp Butter
  • 1 cluster Garlic
  • 1/2 cup Dry White Wine
  • 1/4 cup Sun Dried Tomatoes
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Parmesan
  • 8 oz Linguine
  • 2 cups Fresh Spinach
  • 1 cup Pasta Water
  • 2 large Lemons To serve

Instructions
 

  • Combine the shrimp ingredients in a large bowl & set aside
    2 lbs Raw Shrimp, 1 tbsp Paprika, 1 tbsp Italian Seasonings, 1 tsp Pepper, 1/2 tsp Salt, 1 tsp Crushed Red Pepper, 1 large Lemon
  • Bring a large pot of water to a boil & cook linguine according to package instructions. When draining the cooked pasta, be sure to reserve a cup of pasta water (in case it's needed later)
    8 oz Linguine
  • In a large skillet, over medium-high heat, add olive oil. Once hot, add shrimp in a single layer (use two skillets or two batches if needed- do not crowd the skillet). Cook for 2-3 minutes on each side, or until crispy & cooked through, & transfer to a separate plate. Set aside.
    2 tbsp Olive oil
  • In that same skillet, add your butter & garlic and sauté for about a minute, being careful not to burn the garlic. Add dry white wine & reduce until 75% of the wine has evaporated (about 2-3 minutes)
    2 tbsp Butter, 1 cluster Garlic, 1/2 cup Dry White Wine
  • Add sun-dried tomatoes & sauté for about 3 minutes. Add heavy cream & mix thoroughly. Bring to a boil & then quickly reduce the heat to medium-low.
    1/4 cup Sun Dried Tomatoes, 1 cup Heavy Whipping Cream
  • Stir in the spinach until well-incorporated. Then, stir in the parmesan cheese, mixing so that it melts into the sauce.
    1/2 cup Parmesan, 2 cups Fresh Spinach
  • Add the shrimp to the mixture, stirring until it is coated in the creamy mixture. Here is where you should taste the sauce, adding extra seasonings (paprika, salt, pepper, Italian seasonings) until the sauce is dialed into how you like it. Have fun with this part!
  • Add the cooked pasta to the mixture, stirring until it is well coated in the sauce. If the pasta is looking prohibitively dry, add a little bit of your reserved pasta water at a time until you have achieved optimal moisture.
    1 cup Pasta Water
  • Separate into four equal portions topped with fresh lemon juice & enjoy! (I cut 2 lemons into fourths, leaving me with 2 wedges for each serving).
