Ingredients
  

  • 2 lbs Lean Steak
  • 2 large Bell Peppers Diced
  • 1 cup Carrots Matchstick
  • 1/2 cup Green onions Chopped
  • 1/3 cup Corn starch
  • 1/2 cup Low sodium soy sauce
  • 1/4 cup Sriracha sauce Omit/Decrease for a milder version
  • 1/4 cup Water
  • 1/3 cup Brown sugar (packed)
  • 1 cluster Garlic
  • 2 tbsp Ginger root (minced)
  • 1 cup Jasmine rice
  • 1 tbsp Salted butter
  • 1 tbsp Olive oil
  • 2 tbsp Olive oil

Instructions
 

  • Slice beef against the grain into thin strips. Add to a medium bowl with the cornstarch, & stir to coat.
    2 lbs Lean Steak, 1/3 cup Corn starch
  • In a separate bowl, combine the soy sauce, sriracha, water, brown sugar, garlic, & ginger root. Stir until well combined.
    1/2 cup Low sodium soy sauce, 1/4 cup Sriracha sauce, 1/4 cup Water, 1/3 cup Brown sugar (packed), 1 cluster Garlic, 2 tbsp Ginger root (minced)
  • Start cooking the rice, following your preferred method. I always go with the rice cooker & a tbsp of butter.
    1 cup Jasmine rice, 1 tbsp Salted butter
  • Chop the vegetables, then heat up 1 tbsp olive oil in a large skillet or wok on medium/high. Once the skillet is hot, add the carrot & bell peppers & stir fry until crisp-tender, about 5 minutes. Remove the vegetables to a separate plate.
    2 large Bell Peppers, 1 cup Carrots, 1 tbsp Olive oil
  • Crank to high heat & add 1 tbsp olive oil per pound of beef. Once hot, add the beef & sear for about 2 minutes on each side. The goal here is to create a crispy coating. Make sure not to crowd the skillet, & cook in two batches or in two skillets at a time if needed. Feel free to add more olive oil if the skillet or wok seems dry.
    2 tbsp Olive oil
  • Add the vegetables back into the skillet. Add the sauce & stir until well-combined. Turn the heat down to medium/low and simmer as the sauce thickens for about 4-5 minutes. Divide into 4 equal portions, & garnish with green onions!
