I’m gonna let you in on a little secret here. The macros on these shrimp pasta recipes are inherently a little bit worse than most other recipes. But that’s okay! It’s only because shrimp is low-calorie when compared to its counterpart protein sources, & thus makes up a smaller piece of the overall recipe calories, relatively. HOWEVER, I put in that work on the back-end to get you a shrimp pasta WITH valid macros. This recipe is a certified banger if you are a fan of cheesy sauces, tomatoes & shrimp.

Ingredients

  • 2 lbs Raw Shrimp
  • 1 tbsp paprika
  • 1 tbsp dried basil
  • 1/2 tbsp onion powder
  • 1 tsp black pepper
  • 2 tbsp Olive Oil
  • 8 medium Roma tomatoes
  • 1 cluster minced garlic
  • 1 tbsp dried basil
  • 2 tbsp Olive oil
  • 2 tsp Red pepper flakes
  • 1 cup Half & half
  • 1 cup Parmesan cheese
  • 8 oz Fettuccini

Instructions

  • Combine raw shrimp with 1 paprika, dried basil, onion powder, & black pepper. Thoroughly mix, & then let sit for 15 minutes.
2 lbs Raw Shrimp, 1 tbsp paprika, 1 tbsp dried basil, 1/2 tbsp onion powder, 1 tsp black pepper
  • While shrimp is sitting, dice 6 tomatoes, mince the garlic, & slice your remaining 2 tomatoes into quarters (set these aside- they will be used as a garnish).
8 medium Roma tomatoes, 1 cluster minced garlic
  • Once shrimp has absorbed some of the spices, sauté over 2 tbsp olive oil until cooked through (about 3-4 minutes per side). You may need to do two separate batches in order to not crowd the skillet. Remove to a plate & set aside.
    2 tbsp Olive Oil
  • As shrimp is cooking, begin heating a pot full of water. Cook pasta according to package instructions.
    8 oz Fettuccini
  • Place the remaining 2 tbsp olive oil in your now empty skillet. On high heat, sauté the diced tomatoes, minced garlic, and remaining basil for 2-3 minutes.
1 tbsp dried basil, 2 tbsp Olive oil
  • Return the cooked shrimp to the skillet, stirring to combine. Cook for another 2-3 minutes, until the tomatoes have started to break down.
  • Add half & half to the skillet, bring to a boil, & then reduce to a simmer. Whisk the parmesan cheese into the hot cream sauce & stir on low heat until the cheese has melted & combined into the sauce.
1 cup Half & half, 1 cup Parmesan cheese
  • Add red pepper flakes & begin to taste the sauce to dial it into how you like it. Feel free to add extra salt, pepper, & paprika to taste. I love my Italian seasonings, so I typically add at least another sprinkle or two of basil.
    2 tsp Red pepper flakes
  • Remove sauce from heat. When pasta is done, strain it & then add it to the skillet full of delicious cheesy shrimp sauce. Stir until combined, & then divide into 4 equal sized portions. Garnish with a few pieces of fresh sliced tomato. Enjoy!
